Cold Luncheon 

  • Tossed Salad Mixed greens topped with tomato wedges, cucumber slices, shredded carrots and red cabbage, red and green pepper rings, and onions. Served with choice of French or ranch dressings and crunchy croutons on the side.  

  • Classic Caesar SaladRomaine leaves and cheese and garlic croutons served with Creamy Caesar dressing and freshly grated Parmesan cheese in the side.  

  • Chicken Caesar Salad Our Classic Caesar salad topped with grilled and julienne chicken breast  

  • Steak SaladFlavorful flank steak seasoned with a southwest rub and grilled over open flames. Sliced thin and served atop a bed of mixed greens, cucumbers, tomato wedges, carmelized pecans and crumbled blue cheese. Served with a sweet and spicy chipotle ranch dressing  

  • Mediterranean Salad Roma tomatoes, kalamata olives, pepperoncinis, red onion, feta cheese and mixed greens, tossed with Greek vinaigrette  

  • Cobb SaladMixed greens topped with grilled chicken, ham crumbled bacon, sliced avocado, hard boiled egg and chopped tomato. Served with lemon Dijon mustard vinaigrette.  

  • Italian AntipastoChopped greens topped with imported ham, Genoa salami, pepperoni Prosciutto, Capocollo, Provolone cheese, roasted peppers, onions and artichokes. Dusted with freshly grated Parmesan cheese and served with Balsamic vinaigrette.  

  • Grilled Portabella Mushroom and Red Pepper Salad - mesclun greens, fresh mozzarella, roasted red peppers and tossed with balsamic vinaigrette

  • Szechuan Green BeansFresh green beans blanched and tossed in olive oil and sesame oil, crushed chiles and a splash of soy sauce  

  • Italian Pasta Salad Penne rigatte tossed in vinaigrette with roasted peppers, artichokes, fresh basil, capers and Parmesan cheese  

  • Cucumber and Tomato SaladSliced cucumbers, tomatoes and onions tossed in balsamic vinaigrette.  

  • Thai Noodle SaladLong noodles tossed in soy sauce, sesame seeds, snow peas, scallions, broccoli, red onion, red and green peppers.

  • *Assorted Potato Chips may be substituted for one cold salad 

  • Box Lunches - All lunches include chips, can of soda or bottled water, two cookies, pasta salad, piece of fruit, paper products and utensils. 

 

 

 

Hot Buffet Lunch‏

 

  • Mixed Greens Salad -  Topped with sliced cucumbers, tomato wedges, red and green peppers, shredded carrots, onions and broccoli florets. Served with assorted dressings  

  • Choice of Two Entrees:

  • Sliced Roast Filet of Beef - Seasoned with salt , garlic, paprika and fresh cracked pepper-Oven roasted to perfection. 

  • Turkey Breast  - Boneless turkey breast coated with Dijon mustard and fresh herbs slow smoked over applewood coals.* Sliced thin and served with fresh baked rolls and appropriate condiments.  

  • Fried or Broiled Cod - Fresh Cod filet lightly battered and deep fried. (Broiled)Served with a delicate lemon butter sauce  

  • Baked Ziti Sorrentina - Ziti cut pasta with Chef Myles’ “Made From Scratch “ meat sauce, mozzarella cheese and baked in the oven until golden brown. (Vegetarian is optional)  

  • Cajun Jambalaya  - Tender Gulf Shrimp and Smoked Turkey Sausage, sweet Vidalia onions, brown rice, tomatoes, and Bayou “secrets” (without the heat) 

  • Penne DaParma -  Penne cut pasta, sun dried tomato Pesto, spinach, caramelized onions, wild mushrooms and smoked mozzarella Penne Pasta 

  • Chicken Marsala - Lightly sautéed boneless breasts "painted" with a mushroom and Marsala wine sauce  

  • Fried or Roasted Chicken - Perdue roaster pieces soaked in buttermilk, dredged in flour seasoned with thirteen herbs and spices-deep fried or over roasted to a golden perfection.  

  • Ham Steak  - Country ham steak pan seared-served with pineapple glaze.  

  • Pork Chops - Center cut pork loin chops grilled to perfection  

  • Chicken Parmigiana - Grilled  or Fried chicken breast topped with homemade marinara, mozzarella and Parmesan cheeses  

  • Vegetables - Grilled Vegetables, Squash, zucchini eggplant, carrots, onions and peppers marinated in extra virgin olive oil and fresh herbs ,broccoli, cauliflower and carrots sautéed in garlic 

  • Starch Choice of 2 - Roasted potatoes, mashed potatoes, parslied potatoes, traditional rice pilaf, wild rice blend,  Sweet potato mash, sundried tomato-herb cous cous,  or macaroni and cheese.
